How to Make DATE BALLS | Using Left Over Almond Pulp From Nut Milk

Delicious grain free, dairy free, sugar free Date Balls using left over nut pulp. PLUS how to turn that left over nut pulp into Almond Meal!

Do you ever make nut milk and wonder what to do with the fiber left over afterward? Don’t throw it away!! In this video I show you 2 ways to efficiently use your nut pulp so nothing goes to waste!

Almond Meal Recipe (Same for most nuts. I.e. walnuts)

Nut pulp (the fiber that remains after you’ve squeezed out all of your nut milk)

Parchment paper
Baking sheet
Oven (or dehydrator)

Pour all of the pulp onto the baking sheet lined with parchment paper. Place in an oven at 250 degree F (120 degree C) for 10 minutes. Remove & ensure all water has been cooked out. Store in an airtight container in your fridge. Use in any recipe that calls for almond meal or almond flour! (Almond meal typically means the brown husk hasn’t been removed so the texture is a bit grainier than the finely ground almond flour).

Chocolate Date Balls

2/3 cup almond pulp
1 cup walnuts
1/2 cup pitted dates (I love medjool!) / about 10 dates
1/4 cup cacao powder, plus more for rolling (optional)
3 tbsp bee pollen
2-3 tbsp nut butter, (I used Moroccan Amlou!)
1 tsp cinnamon, plus more for rolling (optional)

Mini prep or Blender

Place your walnuts in your mixer of choice and blend until they are very finely ground (don’t mix too long and form a nut butter!). Now blend everything together to create your dough (I blend in batches because my mixer is a bit small to hold all of the ingredients). Be sure the dough is sticky enough to form into balls. If it’s too dry, try adding 1 tsp coconut oil. Roll into small balls (smaller than a golf ball). If you’d like, roll the balls in your choice of cinnamon or cacao powder or maybe a blend of both! Place in the fridge for 15 minutes to allow them to set. Enjoy!!
