CATCH & COOK – First Time Eating Iguana!!

In this Catch N’ Cook video, I head to South Florida to hunt iguana, then fry them up in a cast iron pan. Iguana are sometimes referred to as chicken of the trees (which is not far off from their taste spoiler alert) and are an invasive species that cause significant environmental and economical damage.

** 14 Inch Deep Cast Iron Skillet

** Recipe
1 cup flour
1 whole egg
1 TBS butter
1TBS hot sauce (more or less depending on your liking of spice)
1 cup unseasoned bread crumbs

** Instructions
– Melt butter, mix hot sauce in then add egg. Beat well
– Sprinkle salt and pepper on meat
– Dredge in flour
– Dip in egg/butter/hot sauce mixture
– Coat in bread crumbs
– Cook in vegetable oil (between 350 & 375) until golden brown
